Afghan ashak(Dumplings)

 Ashak Goshti afghani (afghan Meat Dumplings) recipe 
Ingredients :-
* dough-

1/2 kg all purpose flour 

A pinch of Salt 

1 egg

2 tbs vegetable oil and 

* stuffing:-

1 kg ground meat

4 piece Chopped onion 

Chopped scallions and chopped fresh coriander 

1 tbs garlic paste 

Salt and black pepper 

* Tomato sauce

1/2 cup of oil
1/2 kg tomato paste 

2 onions paste

1 tbs garlic paste

* Yogurt sauce or afghan sour cream (chaka)

2 cups sour cream(chaka) or yogurt 

1 tbs garlic paste

Pinch of salt 

1/2 tbs Mint powder
* Prepare the dough

1-Shift the flour,add a pinch of salt ,egg,oil in a large mixing bowl, make a well and add 1/2 cup of water slowly and knead to form a soft dough, divide the dough into 2 equal balls and cover it with clean cloth keep it side for about an hour,
* prepare the stuffing 

2-Steam the ground meat for about 5 min then add chopped onions,salt,pepper,stirring continuously until it get a little reddish brown then add chopped scallions and fresh  coriander mix it well ,
* Prepare Tomato sauce:-

3-To prepare the sauce heat the oil in a medium pan then add onion and garlic paste , and fry it until it gets soft and golden brown 
Then add tomato paste,salt,pepper,boil and stir well, then lower the heat untill the sauce is thik and oily for half an hour,
* Prepare Afghan Sour cream (chaka) or yogurt sauce

4- in a medium bowl add sour cream(chaka) or yogurt then add a pinch of salt, garlic paste, and mint powder mix them well,
5- prepare the ashak or dumplings

Roll out one ball of the dough on to a floured surface to a thickness of 1/15 inch

Then cut out into equal square size with a cutter,

Put 1 tbs of the stuffed meat on middle of the square and fold it in a triangle shap then fold the two other sides together carefully 

Put each prepared ashak in a floured try or sheet be careful do not place ashak on top of each other as they will stick together,repeat with the remaining dough to make more ashak

Then put 2 ltr water in a large pan add 1 tbs salt, boil it

Drop the ashaks in boiling water and boil it for about 10 mins push them down slowly with a slotted spoon as they raise on the water 

When its cooked,

Remove with a large slotted spoon be careful not to break them,

Place the ashak onto a dish on top of the yogurt (chaka)

Cover it with remaining yogurt or sour cream (chaka) 

Top with little tomato sauce

Sprinkle with fresh mint or fresh coriander and some black pepper
